Nowadays pepper is part of our daily lives and it is an essential element of the table.
There are a multitude of peppers: green, black, white, red, long.
Its colour depends on the stage of maturity of the berries. As for the choice, it depends on taste!
Please note that pepper is like the fruits of the vine, it takes its aromas from the soil that nourishes it, “the terroir”. The flavours of an original pepper are specific to the region where it comes from.
green pepper is the essential part of green pepper sauce! black pepper is perfect for red meat and vegetables. white pepper will be ideal for white meats, fish and fresh cheeses. red goes well with meats, whether red or white, fish, vegetables and chocolate desserts!
But how to use pepper properly?
First of all, be aware that it cannot withstand high temperatures or prolonged heat, apart from long pepper, which is why it is wise to add pepper on the plate or at the very end of cooking. It will then develop all its aromas, without burning.
Sometimes the rules change, we prefer to use pepper before cooking, as in a marinade for example which requires seasoning the meat or dish before cooking, which allows flavouring through impregnation.
In the majority of pepper sauce recipes, it is advisable to heat the sauce with pepper, generally it is green pepper. This sauce is cooked gently, so no attack on the pepper.
It is beneficial for health, it can be made into home remedies, infusions... Combined with other spices, such as turmeric or ginger for example, it works miracles!
But the best is to incorporate it into your daily diet :)
