Warming Vegetable Broth
👉 For 4 people:
2 litres of water
1 onion
2 carrots
2 stalks of celery
1 leek
½ green cabbage
3 cloves of garlic
1 large piece of ginger
1 tsp of turmeric
1 tbsp of Provencal herbs
1 pinch of salt/pepper
Â
Preparation steps:
Prepare the vegetables
Peel and slice the onion.
Peel the carrots and cut them into slices.
Rinse the celery and cut it into small pieces.
Clean the leek and cut it into strips.
Cut the green cabbage into thin strips.
Peel the garlic and ginger, then chop them finely.
Brown the aromatics
In a large pot, brown the onion, garlic and ginger for a few minutes with a drizzle of olive oil, until they release their aromas.
Add the vegetables
Â
Add the carrots, celery, leek and green cabbage. Mix well and cook for 2 to 3 minutes.
Season and moisten
Â
Pour the 2 liters of water, then add the turmeric, Provence herbs, salt and pepper. Mix gently.
Let it simmer
Â
Bring to the boil, then reduce the heat and cook at a low simmer for 40 minutes. The vegetables will infuse and release all their benefits.
Taste
Â
Serve hot, as is with vegetables for a rustic broth, or filter to obtain a clear broth, perfect as a light base for your dishes.
