Beef Braised in Red Wine and Gingerbread
Ingredients for 4 people:
800 g of beef for braising (chuck or another braising cut)
2 sliced onions
2 sliced carrots
2 cloves of garlic, chopped
40 cl of full-bodied red wine
20 cl of beef broth
1 tbsp of honey
1 heaped tbsp gingerbread spice blend
2 slices of gingerbread (optional but recommended)
salt, pepper, olive oil
Preparation:
Brown the meat in a casserole dish with a drizzle of olive oil to brown it well. Add the onions, carrots and garlic, then cook for a few minutes.
Add the gingerbread spice blend, mix well and deglaze with the red wine. Add the broth and honey.
For a more delicious version, crumble two slices of gingerbread into the sauce to thicken it and enhance its aroma.
Cover and simmer for two hours over low heat or in the oven at 160°C.
Result: very tender meat, a fragrant sauce, to serve with homemade mash or fresh pasta.
