Use and storage tips
Use and storage tips
A few simple steps will help preserve the quality of your spices, peppercorns, teas and herbal infusions, so you can enjoy their full aromas and flavours for longer.
Storing spices and peppercorns
What affects their flavour?
Light, heat and moisture can all diminish the aromas of your spices. Avoid keeping them near a heat source, such as an oven or hob, or in a damp place.
Recommended containers
Keep your spices in airtight glass jars, away from light. The tubes and jars available from Citron Safran are specially designed for this purpose.
How long do they keep?
- Whole spices (peppercorns, cinnamon sticks, cloves): 3 to 5 years
- Ground spices: 1 to 3 years
- Spice blends: 1 to 2 years
- Dried herbs: 1 to 3 years
These storage times are a guide. A spice that has lost its fragrance has simply lost some of its aroma — you can still use it, but you may need a larger quantity.
Storing teas and herbal infusions
Keep teas and herbal infusions in opaque, airtight containers, away from light, moisture and strong odours. Avoid storing them in the fridge, where moisture can build up.
- Black teas and rooibos: 2 to 3 years
- Green and white teas: 1 to 2 years
- Herbal teas and infusions: 1 to 2 years
How much should I use?
Spices
When cooking, start with a small amount and adjust to taste. A pinch of spice is often enough to flavour a dish. For Citron Safran blends, use around 1 to 2 teaspoons for 4 people.
Teas and herbal infusions
Use around 1 teaspoon (2 to 3 g) per 250 ml of water. Water temperature and brewing time vary according to the type of tea:
- Green tea: 70–80°C, 2–3 minutes
- Black tea: 90–95°C, 3–5 minutes
- Herbal teas and infusions: 95–100°C, 5–10 minutes
- Rooibos: 100°C, 5–7 minutes
