How to use lavender in cooking
Culinary lavender, with its floral, slightly sweet notes, is perfectly suited to a variety of dishes. It can be used to infuse syrups and flavour pastries and desserts such as crème brûlée or sorbets. Beyond sweet treats, lavender can also enhance savoury dishes, particularly when paired with white meat or goat’s cheese dishes.
The history of lavender
Lavender has been cultivated for thousands of years, first by the Romans, who used it to perfume their baths and linen. Its name comes from the Latin “lavare”, meaning “to wash”, in reference to these practices. It was in Provence, however, that lavender found its true home, becoming over time a symbol of this French region, famous for lavender fields stretching as far as the eye can see.
