How to use Belém black pepper in cooking
As with all peppers, it is essential to buy whole peppercorns and grind them in a mill or crush them just before use to enjoy their full flavour. Do not cook it for too long, as it will become overly bitter. This excellent-quality pepper enhances absolutely any dish! It has a rich, complex flavour, with a woody, lemony aroma and hints of liquorice, coriander and aniseed. It pairs with fine meat and makes its mark in soups, sautéed vegetables, dressings and all kinds of sauces. Brazilian pepper is perfect for chocolate and fruit desserts!
A little history
Belém pepper belongs to Piper nigrum and is therefore a true pepper. It takes its name from the capital of the region where it is grown, Pará. Belém is also known as the metropolis of the Amazon. The state of Pará is now Brazil’s largest pepper producer. It appears that an Indonesian pepper was introduced and adapted to the land around Belém. It is one of South America’s finest peppers.
