Sauce Chien is traditionally served with grilled fish or seafood and also pairs wonderfully with meat, grilled vegetables and vegetarian dishes. Its unique flavour makes it invaluable for marinades or simply for adding freshness and heat to your preparations. Experiment with this sauce to bring a new dimension to your favourite dishes and impress your guests with bold, flavoursome culinary creations.
The history of Sauce Chien
Some suggest that the name refers to the sharp bite of chilli, as lively as a dog's bite. Dog lovers can rest assured: this sauce has nothing to do with our faithful companions! Others say that this accompaniment to West Indian dishes takes its name from a kitchen utensil, the famous couteau chien. This distinctive knife has been very popular in the French West Indies for over a century! Every family owned one, and giving it as a wedding present was a tradition.
Other theories suggest that its name is a French adaptation of the English word “chain”, evoking a chained or poured sauce. Whatever its origin, Sauce Chien embodies a spirit of innovation and adaptation, blending African, European and Indigenous American influences to create a sauce that is a true celebration of Caribbean identity.
