How to use sumac in cooking
Sumac is known for adding a naturally tangy touch to dishes without the sharpness of lemon. Its flavour recalls citrus with earthy undertones, making it an excellent choice for seasoning salads, grilled dishes, fish and marinades. In Middle Eastern cooking, sumac is often sprinkled over hummus, kebabs and flatbreads, adding depth of flavour and captivating colour. It can also be used in dressings, meat rubs and even refreshing drinks.
The history of sumac
The history of sumac goes back thousands of years, with ancient civilisations using it for its flavour. In Middle Eastern cultures, sumac symbolised life and fertility and featured in rituals. The Greeks and Romans also knew this spice with its characteristic tangy notes. Through the ages, sumac crossed continents and cultures, becoming a prized spice in kitchens around the world.
